Mushroom Crostini

Mushroom Crostini Food Recipe

400g mixed wild mushrooms
cleaned & roughly chopped
(or 300g field mushrooms with
20g each dried ceps & morels)
3 tbsp olive oil
1 large onion finely chopped
50g smoked back bacon, cut into strips
1 clove garlic finely chopped (optional)
salt & pepper to taste
4 large slices wholemeal bread
1 tbsp chopped parsley


If using the dried mushrooms, prepare them by soaking in warm water for half an hour in advance. Then pat them dry with kitchen paper and roughly chop them.

Put the olive oil into a frying pan and fry the onions and bacon for 5-6 minutes. Add the garlic at this stage if using it, together with the chopped mushrooms and continue frying for a further 10 minutes or until the mushrooms are cooked.

Season with salt and pepper and then spread the mushrooms onto the toasted slices of bread. Sprinkle with the chopped parsley and serve hot.
